8-10 Green Zebra cut in half
1 large yellow (or white) onion
1 jalapeño or other hot pepper
1 garlic clove
2-3 TBSP fresh basil
1-2 TBSP fresh parsley
1 tsp chili powder
1 tsp olive oil
Pinch salt and black pepper
Arrowroot (or other thickener)
Blend tomatoes, herbs, and seasonings.
Sauté the onion, garlic, and jalapeño.
Add the blend and simmer for 5 -10 minutes. The sauce will be very watery still.
Add arrowroot until the sauce reaches your desired consistency.
Pour over pasta of your choice and serve. Top with goat cheese and nutritional yeast.
